If you are on a low carb diet or just wanting some healthier options for Thanksgiving dinner, this is the side dish for you. You will never miss eating mashed potatoes again now that you can have this deliciously creamy, bacon-flavored mashed cauliflower instead!
Serves: 2-4 people
Ingredients
1 large head cauliflower, cut into florets
4 tablespoons grass-fed unsalted butter
2 tablespoons MCT oil (or Extra Virgin Olive Oil)
1/2 tablespoon apple cider vinegar
Sea salt to taste
1/2 pound pastured, preservative-free bacon lightly cooked at medium-low (not crispy—keep those fats intact), diced
Chopped Parsley or green onion for garnish
Directions
Steam the cauliflower until tender, drain, and blend ¾ of the cauliflower with all other ingredients except the bacon in a high-powered blender.  Stir in the bacon and remaining cauliflower.  Pulse until chunky.  For amazing flavor, add 1-2 tablespoons of the bacon grease (as long as it didn’t smoke when you were cooking the bacon at a low temperature). Garnish with parsley or green onion. Serve and enjoy.
